1 lb. red skinned potatoes
1/4 cup olive oil
1/4 cup diced double smoked bacon
1/4 cup diced red pepper
1/4 cup diced red onion
1/4 cup chopped chives
1 teaspoon fresh chopped thyme
- salt and freshly ground pepper to taste

1. The night before, boil potatoes in salted water until just cooked.

2. Do not overcook potatoes, as they will be difficult to sauté.

3. Drain potatoes and cool overnight in refrigerator.

4. Leave THE skins ON, AS they ADD color AND flavor.

5. THE NEXT morning, cut THE potatoes INTO bite-sized pieces.

6. Heat a large CAST iron sauté pan OVER high heat UNTIL very hot.

7. ADD olive oil AND potatoes WHEN oil begins TO smoke.

8. Sauté potatoes UNTIL they START TO brown.

9. ADD bacon AND sauté UNTIL golden.

10. ADD red onions AND red peppers AND sauté FOR 1 MINUTE.

11. Remove FROM heat.

12. Season WITH salt AND pepper.

13. Garnish WITH chopped chives AND FRESH thyme.
