Directions
1. Prepare cucumber columns by striping cucumbers with a vegetable peeler. Cut crosswise into 2 1/4"-2 1/2" heights. Cut out center of cucumber to desired depth.

2. Insert a variety of salad leaves and flowers to give a colorful and unusual effect. Suggestions: radicchio, endive, young spinach, chives, coriander, parsley and pansies.

3. Serve with choice of salad dressings.
