Fresh 'N Fruity Pizza
Serving Size: makes 4 servings
Ingredients

4 6” pre-baked pizza crusts
3/4 cup vanilla yogurt
2 tablespoons to 1/4 cup granulated sugar, to taste
1/2 teaspoon ground cinnamon
3 cups seasonal fresh fruit, such as grapes, cantaloupe, honeydew, mango, papaya AND pineapple, cut up
1 tablespoon grated orange peel
1 cup cheddar cheese, shredded
1 tablespoon FRESH mint, chopped (optional)

Directions
1. Preheat oven TO 450°.

2. Spread pizza crusts WITH yogurt.

3. IN a small cup, combine sugar AND cinnamon. Sprinkle OVER yogurt ON pizzas. Arrange cut-up FRESH fruit ON pizzas. Sprinkle WITH orange peel AND cheddar cheese.

4. Bake 5 minutes OR UNTIL cheese IS melted. Sprinkle WITH mint. Pizza can be served cold IF desired.

Northwest Cherry-Berry Pizza: Spread pizza crusts WITH strawberry OR raspberry yogurt. IN place OF cut-up fruit, top pizzas WITH 3 cups strawberries (quartered), raspberries, blueberries AND pitted cherries.

Georgia-Peach Pizza: Spread pizza crusts WITH peach yogurt. IN place OF cut-up fruit, top pizzas WITH 3 cups pitted, sliced peaches OR nectarines.

California Plum Pizza: IN place OF cut-up fruit, top pizzas WITH 3 cups pitted, sliced plums.

You can also USE one 16-ounce PACKAGE hot-roll mix (pizza directions are ON THE box), frozen pizza dough, purchased FRESH pizza dough OR one 10-ounce tube refrigerated pizza dough. Preheat oven TO 450°. Brush large baking sheet WITH olive oil OR spray WITH olive oil cooking spray. USING 1 cup dough, stretch OR roll OUT dough WITH floured rolling pin INTO a 6" circle. Place on prepared pan. Brush with olive oil or spray. Bake on lowest oven rack for 10-15 minutes or until edge of crust is browned and crisp.
