Barbecue Sauce 2 tablespoons olive oil 1 medium onion, finely chopped 4 cloves garlic, minced 1 bottle ketchup 1/2 bottle chili sauce 1/2 cup dark brown sugar 1/2 cup red wine vinegar 1/2 tablespoons Dijon mustard a few drops of Worcestershire sauce a few few drops of your favorite hot pepper sauce - salt and freshly milled black pepper to taste

1. Sauté onions and garlic in olive oil for 2-3 minutes, taking care not to brown them.
2. Add remaining ingredients and simmer for 30 minutes.
3. Remove from heat and adjust seasoning.
4. Refrigerate any sauce leftover in a bottle with a tight fitting lid for your next barbecue.

To avoid tears while peeling or slicing onions, chill them in the freezer for 10 to 15 minutes before slicing. Or peel the onions under cold running water.
