Arugula Salad With Sesame Crisps
Serving Size: makes 4 servings
Degree of Difficulty: Easy

For the sesame crisps
1 tablespoon sugar
1/2 cup flour
1 tablespoon black sesame seeds
3 tablespoons vinegar
1 tablespoon melted butter
1/2 cup water

For the salad
2 pink grapefruits, peeled and segmented. Reserve remaining liquid
4 tablespoons safflower oil
1/2 grapefruit, juiced
1/2 shallot, finely minced
salt and pepper to taste
6 cups washed arugula
1/2 cup shaved Asiago cheese

1. Combine grapefruit juice, safflower oil and shallot. Salt and pepper to taste.

2. Place arugula, grapefruit segments and shaved Asiago in large bowl. Toss with dressing.

3. To prepare sesame crisps, combine sugar, flour and sesame seeds. Mix in vinegar. Continue to mix until smooth. Add melted butter. Whisk in 1/2 cup water to produce a spreadable mixture. Let sit for 15 minutes.

4. Heat oven to 400

5. With 2" pastry brush, brush batter onto non-stick baking tray into 16 6"x2" rectangles. Bake until golden. Allow to cool and remove from tray. Place 4 crisps on each plate. Top with greens. Serve.
